Step-by-step method
- Toss peppers, onions, and garlic with olive oil, salt, pepper, and Italian seasoning.
- Place vegetables in a grill-safe pan and put sausages directly on the grate.
- Smoke at 225°F until sausages take on color and reach about 140°F internal.
- Increase heat to 325°F to 350°F, or move sausages to a hot grill, and brown the casings.
- Nestle sausages into the pepper and onion pan. Add a little crushed tomato or Calabrian chili if using.
- Cook until sausage reaches 160°F internal and vegetables are soft with some caramelized edges.
- Serve on rolls with provolone, mozzarella, or just the sausage, peppers, and juices.
